Crepinnete, true art!

A crepinette is a small flatten sausage wrapped in caul fat. Caul fat is also known as lace fat and is the membrane that surrounds internal organs. Wrapping the sausage in caul helps to prevent the sausage from drying out and adds extra flavor. After you get over the whole membrane thing, you gotta admit, those things look cool.
